Our chefs have spent years researching and perfecting home-style recipes from the former North West Frontier province, which covered Punjab, Sind, Lahore, Peshawar and present-day Kashmir. Fresh hand-pounded masalas (spice mixes) and complex cooking techniques ensure that each dish is a masterpiece. Our northern gastronomic odyssey has another legendary stop – Lucknow. The delicate and flavourful food of the nawabs from the culture-rich colonial capital of Indian’s largest state, Uttar Pradesh, is an authentic treat for both meat lovers and vegetarians. An open interactive kitchen and live stations showcase our chefs’ innovations and techniques– flipping napkin-thin roomali rotis and flaunting skewers laden with kebabs – to an audience of gourmands. Connoisseurs of authentic slow food call 24 hours in advance to order from our specialty Terracotta in Terracotta section of the menu, which features marinated meats wrapped in unglazed clay and slow-baked at a low temperature, leaving them exceptionally moist and tender. To get a sneak peek into the kitchen, guests can also book a cooking session in advance with our master chef Anwar Ansari. Special occasions call for the no-holds-barred Teracotta experience - history lesson included - in the private dining room or the patio for a feast under the stars, as each course is paired with fine international wines.
