Executive Chef Anirban and his team of inventive chefs have explored cooking styles, which range from home kitchens. They have sourced secret recipes from standalone cooks. One outstanding cook from Arunachal Pradesh who works as a police officer, and is the father of one of our chefs Jananko, came over to demonstrate cooking techniques and now also helps in sourcing fresh local herbs and other ingredients that add to the authenticity. Don’t be surprised to see live fish in the kitchen and be invited on occasion to make your pick. Try the all rice Assamese Jolpan for breakfast. It’s rice at its best in many avatars – roasted, ground, puffed, boiled, pan caked, sticky soft rice dunked in milk, jaggery and curd. Other hot favourites are the Naga Pork stir-fried in tender bamboo shoots, Wash it all down with Singpho tea – a compressed tea smoked in bamboo, which is unique to Arunachal Pradesh.
